Ingredients

2 kg

800 g
fatty meat — or 1 kg bones (original: 4 uqiyas)
1 head
garlic
1 tsp
ground coriander
3/4 cup
lemon juice

Method

1
Cook the meat and bones first so you have a strong broth, then clean and chop the fresh molokhia leaves.
2
Wilt the leaves with ghee, garlic, and coriander, add strained broth, then return the meat to the pot. Finish with lemon and the remaining garlic before serving with rice.
Notes
The page keeps back part of the broth specifically for the rice served alongside.
