Ingredients

2 kg
eggplant or cauliflower
2 1/2 cups
rice
600 g
meat — or more (original: 3 uqiyas)
2
onions
65 g
pine nuts — about 1/2 cup (original: 1/3 uqiya)

Method

1
Salt and fry the eggplant or prepare the cauliflower, and simmer the meat separately until you have a seasoned broth.
2
Build the pot in layers of onion, meat, vegetable, and soaked rice, then pour in enough broth to barely cover. Cook gently until the rice is done, let it settle, then invert and finish with pine nuts.
Notes
The page explicitly allows the same method with cauliflower in place of eggplant.
