Ingredients

2 3/4 cup
fat or ghee — ≈ 3 uqiyas total (2 vegetable + 1 ghee), ~600 g
2 cup
fine sugar — ≈ 2 uqiyas, ~400 g
11 cup
flour — ≈ 7 uqiyas, ~1400 g
0.88 cup
almond fat — ≈ 1 uqiya (14 tbsp), ~200 g

Method

1
Sift the flour and set it aside. Rub the ghee and sugar together in one direction until the mixture feels lighter and airier.
2
Blend in the almond fat, then add enough flour to make a soft, shapeable dough.
3
Shape the biscuits and bake them in a moderate oven (about 325°F/160°C; not stated in the source), keeping them pale rather than deeply browned.
Notes
The dough should stay pale after baking.
